Yes we indulge, but we also share healthy recipes with you, too! This week, we’ve got a healthy meal from our test kitchen. It can be a vegetarian or vegan option for lunch or dinner.
Hamburger and Macaroni was a staple for Dana growing up. We wanted to see if we could make it as a healthy recipe. This week, we bring you the Vegan version from the Run Eat Drink Pocast Test Kitchen, including meatless crumbles from Gardein (Not a sponsor, but love their products!).
Meatless Hamburger Macaroni Recipe
(The recipe includes Amazon Associate Links to ingredients. These links help support the show at no additional cost to you. Use them or not, we just put them here to make it easier if you do shop there and want to grab the ingredients.):
1 Package (13 oz) Gardein Meatless Crumbles
1 Package (8 oz) of Banza Elbows Made from Chickpeas
4 Cans (14.5 oz) Fire-Roasted Diced Tomatoes
Sprinkle of Dayia Dairy-Free Cheese (Optional)
Directions:
Cook the pasta according to the package instructions. Save 1 cup of pasta liquid. Drain, rinse and set aside cooked pasta.
In a large pan or dutch oven, add diced onion over medium high heat. Sweat the onion, adding a bit of water to prevent burning or sticking.
Once the onion beomes translucent, add the entire package of meatless crumbles and stir, sauteeing to warm them through and browning the crumbles.
Stir in the garlic and black pepper. You can add a little more water (1/4 cup) as needed to help the cooking process along, steaming the crumbles and adding a little bit of moisture to prevent the crumbles from drying out.
Add 4 cans of fire roasted diced tomatoes, with all of the juice. Add the cup of withheld pasta water and bring to a lightly bubbling simmer. Add the cooked pasta, stirring gently to combine, but not too vigorously to break the macaroni.
Spoon into a bowl. Top with sliced jalapeno or a bit of parsley and a sprinkle of your favorite vegan cheese. We like Daia for its melt and overall flavor.
For a smokier flavor, consider adding some cumin. For more heat, add a pinch of crushed red pepper flake or dice a jalapeno and toss it in when you sweat the onions.
Serving Suggestion:
Serve in a bowl with chopped jalapeño and a dash of hot sauce

It’s our first trail run! Okay, a portion of this 5k was on a trail at our local Calusa Nature Center and Planetarium. We were excited to participate in a local and live 5K. The inaugural Run for the Youth 5K to benefit the Sheriff's Youth Activity League was held last Saturday and raised around $7000 to support youth programs. The race kicked off at 7:30AM with a member of the Runcation Nation, Jessica, singing the National Anthem beautifully. Then we were off on a paved road that led to a well-marked trail on the closed course at the Calusa Nature Center and Planetarium. Aimee was still walking, but we finished with the help of members of the Runcation Nation cheering us on through Instagram and on the course, too!
EAT
“bullig” Coffee & Bites is a local breakfast spot a hop, skip, and jump away from our race finish in Fort Myers. We got it on good authority - from an American Ninja Warrior, Morgan “the Moose” Wright- that this was the place to check out. We got two huge breakfast sandwiches, one with house-made hollandaise and one with house-made pimento cheese, both on house-made waffles… so savory and flavorful. You know a place is legit when hollandaise comes in a separate cup that looks it is meant for a small coffee.
DRINK
“bullig” Coffee & Bites is also known for its beverages. Aimee got the Herschel, which is a cocoa latte with pecans, caramel, and marshmallows on top. Dana got the Dirty Bee, an Espresso Chai Inspired Latte with Honey. All we can say is… these drinks could be meals all by themselves. They were full of flavor and a great way to celebrate getting some miles in on a Saturday!

This week we recap our first live race of 2021! It’s also Aimee’s first race back since the knee surgery. The Cape Coral Animal Shelter’s Rescue Run was a 5K to benefit our hometown’s first and only rescue facility for animals. The weather was beautiful. There was a great “runners village” during the pre-race with coffee, breakfast, and more! With no pace requirements, it was the perfect race to pet dogs and follow the advice of our Physical Therapist, which was to walk the entire distance. We finished last. It was a great morning to start a comeback and support a fantastic organization. And, puppies!
EAT
We first met AJ & Christina Bordelon when we covered the Viet Yum Food Truck on Episode 104 at Fort Myers Brewing Company’s 7th Anniversary. They were so nice and the Bahn Mi Rice Bowl was so tasty at that event.
Fast forward to a year later. They are still going strong! They reached out to us and said, hey, come try our new dish. It is called Saigon Wusubi. Their description on the instagram post that introduced it says it all, “Our little take on Spam Musubi! Fried spam caramelized in our Saigon Sauce wrapped with Jasmine rice, toasted black sesame seeds, green onions and nori seaweed, drizzled with our spicy mayo mix. So YUM!”

We met the owners and founders of The Clever Bean at the start of our humble podcast, virtually, of course. They are based in Draper, Utah. They opened a coffee shop up there and we were supporting them via social media. They were nice enough to send us coffee beans and that tempted us to look for races out their way. Then, of course, the pandemic. The founders of The Clever Bean had to close their shop. But that did not deter them from finding success. They have found it by making their product available online and continuing to expand and create. We were lucky enough to be selected to be a part of the Clever Cold Brew Crew and beta-test their cold brew kit. Their product did not disappoint! It is delicious earthy medium coffee and easy to make. We can’t wait to come up with cold brew cocktails and mocktails! This week we share a local spot in heart of downtown Fort Myers called The Standard. We ate brunch there and it did not disappoint! The restaurant was a flurry of activity when we arrived with karaoke in full swing. They do take reservations, which we would strongly advise, but there happened to be an opening right away, so we took it! The bar was stocked with local and well-known brews plus bottomless mimosas and bloody marys for $20 to go with the meal. We started with the jalapeño and sausage corn muffins. They were tender and flaky with a breakfast sausage flavor and just a hint of spice. Dana had “The Hangover” breakfast sandwich and it was full of breakfast meats, eggs, and cheese on a soft brioche bun. Aimee had the “Short Rib Hash,” which was one of several hash dishes that looked mouth-watering as they came out of the kitchen. The Standard does not skimp on the tender meat in the hash, the potatoes were seasoned perfectly and the over-easy eggs had a perfect runny yolk a-top this perfect-sized skillet.

This week, we got the chance to attend a Coffee Connoisseur Tasting and Certification at the Luminary Hotel in Fort Myers. Ulli Winckler is the master roaster for Dean St. Coffee Roastery at the Luminary Hotel and preseident of Rebel Coffee in Cape Coral. We got a special behind the scenes look at what it takes to roast coffee and tasted 12 different varieties of coffee. We break down what we learned this week.

This has been a rough winter for many of our running friends. When it comes to getting out there for a run in the freezing cold, there is nothing better than a recipe that warms the soul to celebrate that accomplishment. A great Irish comfort food that we love is Shepard’s Pie. There is a great place in Disney Springs we have featured on the show before, Raglan Road, that has a delectable and meaty version of this dish.
We have featured one of our favorite cookbooks, The Healthspan Solution, on past episodes, including chatting with authors Ray Cronise and Julieanna Hever on Episodes 108 and 109 last year.
This week we made the Shepherdess Pie from the book. We review it on this episode and talk about what made it so hearty and satisfying as a Vegetarian dish.

DRINK
We talked about a couple of favorite holiday drinks that warm the soul back on Episode 88 of our show. Mulled wine is one we typically make each year for Thanksgiving and Christmas to share with the family. It can help you celebrate a live race you’ve run this winter or help you warm up after a run in particularly harsh winter conditions.
We linked to a recipe online, but did not share our own recipe in that particular episode. This week, we feature our own recipe with an option that provides for reduced sugar.
Ingredients (Serves 6-8 cups of wine)
1 - 750 ml bottles of a favorite red wine ( we selected a barrel-aged Cabernet Sauvignon
2 oranges- zest and juice of one and the other sliced in rounds to use for garnish
8 whole cloves
4 cinnamon sticks
2 whole nutmegs
*Normally a cup of sugar and a cup of water are added to sweeten the recipe. To make a more healthful version, you can leave this out and drink it without sweetening or use agave nectar or honey to taste with each serving.
Directions
Pour wine into the instant pot or crock pot. Add the zest of the orange. Squeeze the juice of the orange into the wine and add the whole orange into the pot. Cook on low for two hours. Pour into mugs, stir in agave nectar or honey to sweeten, if desired, with a garnish of an orange slice and enjoy!

This week, we got a bit of cooler weather here in Florida, so, Dana made soup. But not just any soup. It is a vegetarian version of a soup we are so fond of at The Columbia Restaurant. The Spanish Bean Soup is one we had on the first episode of our show. Theirs is delightful with Chorizo, Onion, Chickpeas, and warm spices.
We used our instant pot to create this version. It makes approximately 8 servings.
Here is our recipe:
Ingredients:
White Potatoes Diced - 6 potatoes
Water - 8 Cups
Dry Garbanzo Beans - 1-lb Package
White Onion Diced - 1 whole onion
Diced Carrots - 4 whole
Diced Celery - 4 stalks
Diced Jalapeño - 1 Whole
Minced Garlic - 6 Cloves
Smoked Paprika - 2 Tablespoons
Liquid Aminos - 4 Tablespoons
Chopped Fresh Kale - Half of a 16-ounce bag
Directions:
Combine all ingredients except kale in the instant pot. Set the instant pot on high and cook for one hour. Release valve and depressurize instant pot. Add kale. Turn back on low for 20 minutes. Then divide equally among 8 bowls and enjoy. Or divide among containers to store for the week for lunch or dinner.

Monday, February 22nd, was National Margarita Day. So, we share our own Pineapple Jalapeños Margarita recipe to honor this day!
Ingredients (Serves 2)
Silver Tequila - 2 ounces
Cointreau - 1 ounce
Pineapple Juice - 2 ounces
Lime Juice - 1 ounce
Sliced Fresh Jalapeños - 4 (2 are for muddling and 2 are for garnish)
Sliced Lime Wedges - 2 for garnish
Jalapeño Simple Syrup (1 cup sugar, 1 cup water, 1 additional jalapeño halved from those listed above)
Directions
Make Jalapeño Simple Syrup prior to mixing drink by bringing 1 cup sugar and 1 cup water to a boil on high heat. Remove from heat and add jalapeño. Allow to steep in mixture for a few minutes before preparing remainder of ingredients.
Combine all the rest of the ingredients in a shaker with ice and 1 ounce of the Jalapeño Simple Syrup. Shake for a few seconds and strain into two different glasses over ice. Serve with lime wedge.

We celebrated Valentine’s Day and the completion of Dana’s virtual races at Blue Dog Bar & Grill with a great local brunch! Fresh local seafood was featured in dishes like Conch Patties, Smoked Fish Dip, and Shrimp and Grits. Plus, it is Stone Crab season The homemade mustard sauce with the fresh claws was so tasty! It is a great local place that made us feel like we were on vacation only 15 minutes away from home.

Dana did an Iron Man this week! Really, Dana ran a 10K this week. He earned a medal from the Medal Chasers Assemble Series, “Part of the Journey is the End.” The medal features Iron Man and lights up! It is so cool. And as fans of Tony Stark, the title of the virtual…so appropriate. Even better, the featured charity is one we have talked about before, the Pinky Swear Foundation. According to their website, "Pinky Swear Foundation eases the financial and emotional impacts experienced by children with cancer and their families by providing basic needs support during a very challenging time.” It is an amazing mission and we are so happy to feature this foundation through this virtual event provided by Medal Chasers.
We thought highlighting this race was also very timely, as we also have an entire team of the Runcation Nation running to support The Donna Foundation through the Donna Marathon Weekend virtual events. Thank you to so many of you - almost 30 of you- who have answered the call and chosen to register to run anywhere from 0.0 to 110 miles, “everywhere, together.” This week is the week many of you will run the distance and submit an official time and others will begin to complete their own race at their “own pace” while supporting this amazing organization. This week, we feature another recipe from our kitchen. Actually, it is one we found on Blissful Basil. The images there just made our mouths water and we had to try it! Ashley, who creates these recipes, features plant-based recipes here. We thought a brunch recipe would be perfect for post-virtual race refueling. The Southwest Sweet Potato Breakfast Hash has so many levels of heat and layers of flavor, while being vegan! Sweet potato, guacamole, and chipotle cream come together for a hearty and satisfying dish!

This week we are joined by one of the owners and the Director of Operations from Barrel of Monks Brewing, Kevin Abbott. Barrel of Monks brews Witty in Pink every October and donates to a local organization supporting those who battle cancer. Kevin sat down with us to talk about the inspiration behind this tasty brew. We found it at Total Wine at this time of year, luckily. Perfect finish line beverage!

We have a great interview to share with you this week. We are faithful followers of the run-walk-run method founded by America’s Coach and Olympian, Jeff Galloway. But we have never talked about all the resources available to implement this training strategy.
We talk with Chris Twiggs, National Program Director of Galloway Training, on this episode. He shared his journey to becoming Program Director with us. Chris also highlights Galloway Training Groups worldwide that you can find and join to get in-person support. When that is not an option, there is an excellent value in Galloway Customized Training with Chris. He creates a 6-month training plan for you and hosts online conversations weekly. Customized Training provides an online platform called Final Surge to see your training, message Chris, and document your progress. Finally, if you want to, you can get coaching from Jeff Galloway himself through E-Coaching. You have direct email access to Jeff in this type of training. Jeff creates your plan and continues to modify it throughout the six months of working with him.

Chris talks about his own choices for nutrition before a run and during a run. He has toast before a race. Coach Twiggs is a lucky one who can rely on gels during a race. We also asked him what he likes to celebrate after crossing the finish line, too! For example, a place we have wanted to try at Disney Springs in Orlando called B.B. Wolf’s Sausage Company. In Jacksonville, he talked about a place that so many have recommended to us on more than one occasion, V Pizza. We could destroy some pizza after a race in Jacksonville!

Coach Twiggs shares his favorite beverage options. Before a race, he is a man after our hearts because he drinks coffee and has a Nespresso just like we do! During a race, he relies on Tailwind. We’ve always wanted to try it. After a race, where does he go to celebrate? It’s a place that we want to get to, Oga’s Cantina. Who could resist a drink called the Fuzzy Tauntaun? In Jacksonville, he says check out Flask and Cannon.

Dana ran a 10K this week as Aimee continued her road to recovery and back to running. The 10K we feature is from one of our favorites, Medal Chasers. The Challenge Continues 10K from our friends, is a virtual race supporting the Colorectal Cancer Alliance. We discuss his run, the featured charity, and the bling he earned as well as an update to Aimee’s progress.
EAT
We continue to share healthy meals and snacks with you this week. We are getting 2021 off to a great start with some of our favorites. This week’s dish is one that can be a lunch or dinner vegetarian or vegan option. It is also a good option to warm your soul at this chilly time of year, no pun intended.
Meatless Chili (With Amazon Affiliate Links to Ingredients):
1 Pound (16oz) of Dried Red Kidney Beans
2 Cans (10oz) No Salt Added RoTel
2 Cans (10oz) Fire Roasted Diced Tomatoes and Green Chilies
Directions:
Add kidney beans, RoTel, Onion, Cumin, Onion Powder, and Chili Powder to Instant Pot. Set to pressure cook for 1 hour on high. After pressure valve releases, add Bulgar Wheat. Then, pressure cook another 20 minutes. After cooking is completed and. Instant Pot is depressurized, stir in Liquid Aminos.
Serving Suggestion:
Serve in a bowl with raw, chopped onion, chopped jalapeño and a dash of hot sauce or lime

We got suggestions for our show in the coming year and one was the desire to see food and beer pairings. So what goes with our vegetarian chili? A website where we have found some delicious and healthy recipes for many years, Cooking Light, recommends a Pilsner. This week we try a beer from Destihl called Normal Pils. It is a bready beer with a 5% ABV. Sweet malt and earthy hops are at play to cool our palate after our spicy take on vegetarian recipe this week.

This week we talk about running groups. Support, community, and friendship around goals can be an important part of being able to achieve them. Running groups, whether you get virtual support or in-person encouragement can be a key part of pushing forward, especially in challenging times. There are several running groups on Facebook that we belong to and gain so much from. The online community is so strong.
Here are some positive examples of groups we are fortunate to be a part of and talk about this week:
We are also lucky enough to have an in-person running group in our town. The Cape Coral Running Group is following all the safety guidelines to be able to meet in person. Their runs are most times on Sunday mornings and they welcome anyone at any fitness level, even walkers like Aimee will be when she starts back to her run-walk-run.
We wanted to feature a member of the group and share her journey to provide inspiration, support, and encouragement for anyone in the Runcation Nation that is thinking about trying to join one but may be hesitant to do so. Jennifer Wagner was kind enough to talk to us about her running journey and how the group supports her. Maybe her experience will encourage you, when you can safely of course, to explore your local running groups and give them a try.
EAT
We got requests for great snacks that we eat on a regular basis when we are training or just need something great, healthy, and filling. Our go-to: hummus. This week we talk about the recipe and all the different ways we incorporate hummus into our diet.
Chickpea Hummus Ingredients:
1 Pound (16oz) of Dried Chickpeas
1/2 Cup fo Tahini
2 Tablespoons of Cumin
8 Garlic Cloves
Juice of 3 Lemons
Directions:
We cooked the chickpeas in the instant pot, covering them with water for an hour and let them cool for an hour after. Then we drained them and combined them in the blender with the other ingredients. Blend well to the desired consistency. Store in sealed refrigerator-safe container for the week.
Serving Suggestions:
Crudités Platter
Hummus Toast (We top with walnuts and sriracha)
Stuffed Mushrooms

This week we try a drink that is a bit out of the ordinary. The Green Juice Martini was featured on Guy’s Ranch Kitchen. This drink is full of green veggies like cucumber, kale, and celery plus green apples and lemon juice. The recipe calls for parsley, which is typically a flavor that we are not fans of, but thought we should give this a try. The featured spirit in this drink is gin, although we wondered if a different spirit would impact the flavor of the beverage or if the green juice on its own would be tasty. So, we venture into the uncharted territory to see if this is a winner of a beverage.

This week, we asked what you’d like to see and hear on our show in 2021. Part of your feedback to us was that you’d like us to share some pre-race meals and breakfasts that we enjoy or that we have on a regular basis. This week, we present to you a staple in our house: Cold Soaked Oats. We love this recipe because it’s make-ahead friendly, travels well, is filling, and an easy healthy breakfast to get us started right. It is great pre-run or on a rest day. Actually, any day this is a go-to for us.
Cold Soaked Oats
Combine the following ingredients into sealed storage containers (Tupperware or something like it) overnight in the refrigerator:
1/2 Cup Old-Fashioned Rolled Oats
1 Cup Vanilla Almond Milk
Top just before eating with:
1 Tablespoon Flax Seeds
1 Tablespoon Chia Seeds
1Tablespoon Cocoa Nibs
1/4 Cup Raw Almonds

Eric Greenspan is a renowned chef often featured on Food Network. This week, we take his recipe for a spin: Chili Mango-Agua Fresca. It combines the fruity flavor of the mango with the slight warmth of chili. Easy to make and non-alcoholic, it is a refreshing beverage after a workout or just to put in a fancy glass and feel like you are having a cocktail when you are not. Or, you could transform this beverage into an adult version by adding that shot of tequila. We even talk about using different ingredients depending on what fruit and spice you like.

Don’t you love it when you stumble upon a place with a great atmosphere and even better food? That is what happened to us on Christmas Eve. Right across the street from our Hilton was a place called Hotel Bar. It has a late-night up-scale feel. We make no secret that we are obsessed with tapas-styled dining, and this place introduced us to so many delightful and delectable small plates. If you bring your friends, just order all of them to nosh on as you relax and soak in the swanky and laid-back environment here at Hotel Bar.
DRINK
Hotel Bar has wine, beer, and cocktails, but it is known for bringing specialty cocktails from world-famous hotels to this Tampa location, so you can taste your way around the world, even though, we may not be able to travel to these exotic locations. Inspired by famous hotels in France, England, Louisana, Singapore, and New York. A variety of liquors are used to create perfectly-balanced adult beverages. We were so glad that this place was steps away from our hotel, so we could walk there! If you get to Tampa, visit Hotel Bar. You won’t be sorry!

On a more serious note, we discuss Aimee’s surgery and where we go from here. She’s hanging in there on the road back to recovery. She starts physical therapy on Christmas Eve! Wish her luck! It will be tough, but we know it will be worth it!
On a happier note, it is Christmas week! So we thought we’d talk about all the gifts running has brought into our lives, especially in 2020, that we are grateful for and will celebrate this holiday season.
Don’t forget the holiday virtual race we will be running on Christmas Day! Run for A Claus, supporting the Salvation Army, is now closed, but If you had the chance to join our team, make sure you post pics and tag them with #runforaclaus, @runforaclaus, #runcationnation, and @ocmarathon so we can share in a holiday celebration and virtual run together!
EAT
Holiday meal traditions are near and dear to our hearts and bellies this week! So, we thought we’d celebrate them by talking about some of ours. In addition, you all came through with some fantastic meal favorites so we share traditions from you as well! Thanks, Runcation Nation! We will be thinking of you as we eat one of our favorite new traditions from the last few years, Christmas Eve dinner from The Columbia Restaurant in Tampa!
DRINK
Eight-Foot Brewing here in Cape Coral had some tasty new releases this past weekend. So we decided to head to their Saturday event and try two of them. Apple Cinnamon Doughnut made with apple, cinnamon, and marshmallow comes in at 11.4% ABV! Plus it is served with a Fort Myers favorite Divine Doughnut! Breakfast Stout was made with Maple Syrup and local Urban Buzz Coffee. At 10%, this tasty stout was served with a quarter of a waffle and maple smoke! We are so happy to have such creative minds in our local breweries. Congratulations, Eight-Foot Brewing on two great releases! We can’t wait to try more.

This week we talk about Epcot’s shortest festival, the Festival of the Holidays. These holiday kitchens showcase some of the food of the season and we discuss some favorites that we sampled around the world! From traditional turkey dinner to pastrami and blackened bass, we tried some tasty dishes.

Festival of the Holidays also gives us the chance to sample some festive cocktails and seasonal beers. We got some from around the country and some from our own backyard. Featuring breweries like Shipyard, 81Bay, Ciderboys, Playalinda, and 3 Daughters.
