RED Quick Bite #7: Fresh and Easy Guacamole at Home

Yes! You can make guacamole at home in no time, and I am proof of that! The avocados are looking good at farmer’s markets and grocery stores at this time of year, so why not use them in a healthy recipe like guacamole to put on delicious pork tacos, as a dip with a snack of carrots and celery, or as a topping for delicious nachos or a nice piece of skirt steak fresh off the grill.
Here is the recipe from this episode:
Ingredients:
1 ripe avocado
1 tomato (plum or vine-ripened tomatoes are great)
1/4 of a medium red onion
1 jalapeño (you decide if you want extra heat by leaving the seeds and membranes in or removing them)
1/2 of a lime
1/4 cup cilantro
1 teaspoon adobo seasoning (not the sauce that comes from the chipotle in adobo sauce, although that might add a smoky twist to the recipe, so if you try it, let me know!)
Preparation:
- Chop all the veggies to relatively the same size and slice the lime.
- Chop the cilantro.
- Chop the cilantro.
- In a large bowl, add the avocado and mash it with a fork to desired consistency.
- Squeeze the lime into the bowl and stir it into the avocado.
- Add the chopped veggies to the bowl and stir to combine.
- Add the adobo of your choice and season to taste.
- Stir well.
- Taste. Finish with an extra squeeze of lime and any extra adobo seasoning you like.
- ENJOY!

This week I was lucky enough to have a mid-week day off from work so we could go to our favorite pizza joint of all time, Nice Guys Pizza. I will review their food in a later episode, but tonight, it is all about one of the beers they had on Nitro, JDub's Brewing Company out of Sarasota, Florida. Bell Cow Milk Chocolate Porter is smooth, light bodied, and the prominent chocolate flavor makes it the perfect adult chocolate milk.

After any race, it is time to celebrate and refuel. At the Columbia Cafe, a part of the Columbia Restaurant family which has been a Tampa staple since 1905, we sample the Devil Crab Croquette. It is a delicious combination of Cuban breadcrumbs, spices, and crab, deep fried together for the perfect bite. It was so delicious, it took 2 minutes to review it. In this quick bite, we take 90-second break from running to sample our final beer at the Tampa Beer Run, all of this benefitting a great organization called My Hope Chest. Coppertail Brewing Company's Unholy Trippel and has an ABV of 9.5%, although its light color could fool you. It would pair very well with the deviled crab croquette we had at the Columbia Restaurant (featured in our next quick bite). It has notes of apricot and a bitter finish. In this quick bite at beer stop #3 on the Tampa Beer Run, we sample Free Dive IPA from Coppertail Brewing Company and tell you about it in less than 90 seconds. At 5.9% ABV, this American IPA has hints of citrus and a bitter finish. It might go well with some Florida seafood, like stone crabs. Enjoy! This is a quick review of a tasty beverage from our Tampa Beer Run, Funky Buddha's Pineapple Beach. This blonde ale is great for a hot day and light enough to drink while mowing the lawn or after running a 5K. Hey, Everyone! Welcome to our first episode, where we head to Tampa, Florida for the Tampa Beer Run. Yes, we get to sample beer on the course, but more importantly, this run raises funds for My Hope Chest, which helps women pay for reconstructive surgery after their courageous battles with breast cancer. After the run, we need to refuel, and what better way than to sample Tampa on a plate at the Columbia Restaurant. Our final stop on this trip is Cigar City Brewing, where you can spot the rolling of cigars and a long line of tasty beer on tap, and ours is just a sampling of their libations. AL LOPEZ PARK
This is a beautiful park that is flat and an easy run. There was no time limit or specific pace per mile you needed to adhere to, so this race is great for beginners or run/walkers.

We paid a reasonable entry fee of $45 dollars and added a VIP ticket for $12 more to get a couple of extra beers at the after party as well as souvenir Tampa Beer Run glasses and a white cotton t-shirt.
